One of my favorite things about the Flat Top is how easy it is to clean. After a big meal, instead of dealing with several pots and pans in the sink, there's just one thing to deal with. While it's still warm after cooking, pour just a little water and use a scraper to remove any food or gunk and wipe it clean with a paper towel. If it's extra messy, add some kosher salt as a mild abrasive to the water to scrub it clean. You don't want your Flat Top TOO clean, that layer of seasoning that makes it dark is where all of the flavor and non-stick goodness comes from.
