(Makes four servings):
12 chicken tenderloins
1-1/2 cups quinoa, 3 cups chicken stock
1 yellow onion, finely minced
1 red bell pepper, finely minced
2 jalapeños, seeded and finely minced
2 tablespoons freshly minced cilantro
Favorite spices plus salt and pepper
Instructions: Before placing Flat Top on stove, in a medium pot mix quinoa and chicken stock, bring to boil, then cover and set to low. Remove once all liquid is absorbed and add Flat Top to stove. Sear all minced vegetables on one side while grilling chicken tenderloins on other (SWIPE FOR PHOTO). Lightly dust tenderloins with salt and pepper plus your favorite spices. Once all sides are seared, douse with water to steam and coat tenderloins with glaze of spices. Mix seared vegetables with quinoa and place cooked tenderloins overtop. Garnish with fresh cilantro.
