Cut a chicken breast diagonally into 1-inch-wide strips and soak in your favorite marinade. Skewer chicken strips with bamboo sticks and grill on Flat Top until fully cooked. Serve with rice and following Thai peanut sauce recipe: Two 13.5-ounce cans of unsweetened coconut milk, 1/4 cup red curry paste, 3/4 cup brown sugar, 1/4 cup lime juice, 1 cup creamy peanut butter, and 2 tablespoons fish sauce; add all ingredients to medium pot and heat on medium-low for one hour, stirring often.
